Lunch – 08/06

Chorizo omelette – 30g of Spanish chorizo 129 calories, cooked in a frying pan for a few minutes then taken out with a slotted spoon and the excess oil poured away, then add two Big & Fresh eggs 206 calories, lightly whisked, to the hot frying pan, then leave until pretty much set then add half a teaspoon of chilli flakes 3 calories and the chorizo and served with 25g of watercress 5 calories and 7 pomodoro cherry tomatoes 21 calories

Can of diet coke with cherry 3 calories

Total = 368 calories

I love omelettes! This was the first time I had made one with chorizo and it was sooo good. Yum!

Chilli cheese omelette (based on this recipe from the BBC Good Food website – http://www.bbcgoodfood.com/recipes/2973/chilli-cheese-omelette) – two large Lion’s eggs 206 calories whisked together with a teaspoon of dried chilli flakes 6 calories put into a hot pan until pretty much cooked and then topped with 25g of Cathedral City mature yet mellow cheddar cheese 104 calories and a chopped up slice of pepperoni 23 calories folded so the cheese melts and served with 25g of Tesco watercress 6 calories and 7 cherry tomatoes 21 calories

After making my first successful omelette on Saturday (and it was delicious I might add!), I decided to make another omelette today, based on a recipe I found on the BBC Good Food website. I love chilli and cheese and eggs so decided to make the chilli cheese omelette. I added a slice of chopped pepperoni though to add a little bit of meat to it. It was really good though. I love omelettes 🙂 will definitely be having more of these now I know how easy, and how good they are. I think I preferred this to my one on Saturday – which if that was delicious shows how good today’s was 🙂

I am not really going to be having tea tonight as I won’t be home until after 9 so I am just going to have toast, so I thought I would have a really big lunch to make it worthwhile which this bean chilli and rice is. Really filling and really tasty!

Half a sachet of Options cracking hazelnut hot chocolate mix 20 calories mixed with 50g of Lidl Eridanous Greek style 2% fat yogurt 30 calories to make a chocolate yogurt with 80g of defrosted Sainsbury’s frozen dark sweet cherries 42 calories mixed in

This mix is really good. Like a healthy blackforest gateau!
